We are the only company in the UK that offers a service like this. We deliver fresh dough to your door in commercial dough trays, ready to be used in your restaurant. We can also supply frozen dough if that is your preference.

We specialise in dough made with a biga pre-ferment, with final fermentation being cold proofed over 48 hours. Our dough management is temperature controlled to not only create the best possible product, but also to ensure you receive exactly the same dough whether it's the middle of Summer or the coldest Winter.

We specialise in 3 main styles of pizza dough, all of which use a biga pre-ferment and refrigerated fermentation, giving us a lot of flexibility over timing, and ensuring your dough is perfect every day of the year.

Our doughs use a variety of high quality Italian and British flours to ensure they're the perfect fit for the style of dough being created. Our Detroit dough is typically a combination of either 2 or 3 flours, depending on the specific process used by the customer - we customise this to suit your exact process and style of pizza. Our New York and Detroit style doughs contain extra virgin olive oil to add colour and flavour to the final pizza.

Doughies works directly with Molino Pasini, a leading Italian artisan flour producer with over 100 years of history. They operate a state-of-the-art milling plant and laboratory, with flours that reflect this quality.
